麦芽塌饼即立夏塌饼,是西塘千年风俗之特色时令点心。 丁记麦芽塌饼是以糯米粉、黑芝麻、赤豆、核桃仁、白糖,并配以中草药佛耳草、麦芽为原料,采用传统手丁精制而成。丁记麦芽塌饼,口感柔软、不粘不糊,佛耳草香气浓郁,诱人食欲,并能够消食降脂、延年益寿,是赠友敬老之佳品

麦芽塌饼
相传明代西塘一富贾婚久未有子嗣,后经一道人指点乐行善举,修建路、桥以便众人 在建桥时天宫仙鸟凤凰停歇桥边,而该富商也于当丰喜得贵子,故此桥取名。送子来凤桥。现经修缮后在千丰古镇西塘朝南埭。富商在得子喜庆之时大摆筵席,其间一道主菜,即 蹄子。众人为贺喜将其名为送子龙蹄,自此,凡方圆各地在婚嫁喜庆乔迁新居,家人团聚时均以该菜作为主菜,意为早得贵子,团圆吉祥。送子龙蹄。采用优质猪腿肉,配以数十种祖传佐料,经煨煮蒸焖、旺、文火反复,肉质酥嫩脱骨、肥而不腻、味美相宜。
“鱼米之榔”西塘水产资源特别丰富,阡陌之间鱼塘星罗棋布,其中最负盛名的就有汾湖。生养其中的白丝鱼以肉质鲜美,营养丰富,在西塘美食谱上占有一席之地。白丝鱼喜食小鱼虾.游勤快捷,“有浪里白条”美称,然而白丝鱼出水即死,故市价昂贵。清蒸白丝鱼的烹饪很讲究原料。做法细腻。重任保持鱼的原滋原味。在杀净鱼身时加少量的盐腌制二小时以上,取出洗净再放进白嫩豆腐,加上佐料待到5成熟时加料酒,取出笼蒸5—6分钟即可。品尝时入口鲜嫩,味浓醇厚。
西塘水网交错,源头来自太湖,极佳的水质为野生旁皮鱼的生长提供了良好的环境,旁皮鱼沿岸群居而生,故而得名。长约寸十,体形扁平而小巧,永远长不大。野生旁皮鱼烹制的方法有红烧、清蒸、做汤等,其中最具特色要数椒盐旁皮,捞起稍后,复炸—次,沥干油,泮上葱末及椒盐,装即成,此菜香酥松脆,即美味又补钙,是一道雕得的绿色佳肴。

西塘的粽子有很多口味,如鲜肉、豆沙、猪油、赤豆等,虽然粽子是一种很多地方都有的小吃,可西塘的粽子却因米好,料足,捆扎紧好而更香,更糯,成为如今小镇传统旅游产品的一种。The glutionous rice dumplings in Xitang have many tastes,such as fresh meat,sweetened bean paste,lard oil and glutions for good rice quality,adequate spices and tight wrapping,thus becoming one of the traditional tourist products of this small town.
六月红是指农历六月的夏天所产的河蟹。“六月红”的蟹身只有鸡蛋那么大,蟹肉鲜嫩、蟹肪滴油、壳薄,放入清水一蒸就变绯红,故此得名。在杭嘉湖一带还流传“穷再穷,不忘六月红”的俗语,那是对“六月红”河蟹的赞美。Red of June means the river crabs produced in June of lunar calendar.The body of "Red of June"crab only has a size of a hen egg.Crab meat is fresh and tender,crab fat is full of oil and crab shell is very thin.The crab will be brightly red after being steamed in clean water.It is very famous for this reason.As the saying goes in HangjiaLake,"never forget Red of June,even if very poor",which is a praise for"Red of June"crabs.
